Peach BBQ Chicken Burgers

Peach BBQ Chicken Burgers – Chicken burgers are one of my very favorite items to cook on the grill. They are so versatile and you can flavor them any which way. Basically, whatever you are craving can be mixed into a chicken burger with magnificent results!

This time I chose to go with a peach BBQ sauce, Moneterray jack cheese, and a little spring mix. It was perfectly balanced and we loved the BBQ sauce. It was sweet and just a little spicy, it was absolutely summery and delicious.

For the BBQ sauce:

  • 1 tbsp. vegetable or canola oil
  • ¼ cup onion, minced
  • ½ tsp. kosher salt, divided
  • 4 large, ripe peaches, peeled and chopped (or 2 cups frozen peaches, thawed and liquid reserved)
  • 2 small tomatoes, seeded and diced
  • 1 tbsp. apple cider vinegar
  • 2 tbsp. brown sugar
  • 1 tsp. minced chipotle peppers in adobo sauce
  • 2 tbsp. cilantro, minced
  • 2 tbsp. freshly squeezed lemon juice
  • Kosher salt and freshly ground black pepper, to taste

1. In a medium saucepan, heat oil over medium heat. Add onion and ¼ teaspoon kosher salt and cook until softened, about 5 minutes. Add in peaches (and any juice from thawed frozen peaches) and tomato and cook for about 10 minutes, until peaches are mostly softened.

2. Stir in vinegar, brown sugar, and chipotle peppers. Cook for about 5 minutes. Using an immersion blender, blend off the heat to desired consistency. (Alternately, use a regular blender and carefully pulse with the vent open to let the heat escape. You made need to cover it loosely with a kitchen towel to avoid splattering.)

3. Return BBQ sauce to the heat and stir in cilantro, lemon juice, and remaining ¼ teaspoon kosher salt. Reduce heat to low and allow to simmer for at least 15 minutes. Season to taste with additional salt and pepper.

For the chicken burgers:

  • 1 lb. ground chicken breast
  • Kosher salt and freshly ground black pepper
  • ~1/3 cup peach BBQ sauce Monterrey jack cheese
  • Spring mix salad or other lettuce
  • Hamburger buns

1. Season the ground chicken with salt and pepper and then combine with about ⅓ cup peach BBQ sauce. Mix well but be careful not to overwork the meat.

2. Divide evenly into four patties and cook using desired method (grill, skillet, etc.). Cook completely and top with additional BBQ sauce, cheese, and spring mix.
