Chocolate Chip Cookies from the crumbly cookie – What is there to say about chocolate chip cookies that hasn’t been said before? I really haven’t met a version that I didn’t like. I will say, though, that every time I think I’ve found The One, another version pops up that I just have to try.

I have posted just a few versions in past years (along with some pretty horrendous pictures). The Chewy has been a long time favorite but I felt like they weren’t holding up past day one. They just seemed to go stale really quickly and even though we love chocolate chip cookies, eating a whole batch in a day just shouldn’t happen between 2.5 people. 😉

Bridget always has great comparison posts so I immediately went to her blog when I wanted to make chocolate chip cookies. The version that I chose is her own recipe that she’s put together from a bunch of other recipes. I have to say that it was the easiest cookie recipe I’ve made in a long, long time. They were in the oven in just minutes and I had the whole kitchen cleaned up before the first batch had finished baking.

I couldn’t resist trying one as soon as they were cool enough to handle (you know, 30 seconds or so). These really are delicious. Crispy edge, gooey and soft center, full of chocolate chips, and just all around a great cookie recipe to have in your repertoire. These are my new favorite, for sure.

  • 2¼ cups (11.25 oz.) bread flour
  • 1 tsp. baking soda
  • 16 tbsp. (2 sticks) unsalted butter, at room temperature
  • 1 tsp. salt
  • 1 cup (7 oz.) brown sugar
  • ½ cup (3.5 oz.) granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups (12 oz.) semisweet chocolate chips

1. Heat the oven to 375°F. Line baking sheets with parchment paper or silicone mats; set aside.

2. In a medium bowl, mix together the flour and baking soda; set aside.

3. In the bowl of an electric mixer, beat the butter, salt, and sugars on medium speed until light and fluffy, 2-3 minutes. Add in the eggs one at a time, beating until incorporated and scraping down the bowl as necessary. Mix in the vanilla.

4. Reduce the mixer speed to low and slowly add the flour mixture, combining until just incorporated. Add in the chocolate chips and stir together.

5. Scoop the dough by tablespoonfuls onto the prepared baking sheets. Bake the cookies, one sheet at a time, until they are just beginning to brown around the edges, 8-12 minutes. Let the cookies cool on the cookie sheets for 5 minutes, then transfer to wire racks to cool completely.
