Homemade Pizza Sauce

For a long time after I started making homemade pizza I was still using store bought pizza sauce.  This always baffled James because I make so much from scratch but for some reason, I just couldn't replicate the taste that I was looking for.  I like my pizza sauce to be tomato-y but slightly sweet, have a good garlic flavor and be full of herby goodness.  For a long time I just couldn't recreate this.  I tried and tried but every time it fell flat.

I don't know exactly what changed but I finally made a pizza sauce that I was very happy with.  I think that using good quality canned tomatoes definitely helps and so does keeping it fairly simple with the cooking and seasoning.  This sauce takes no more than 20 minutes from start to finish, less if you don't simmer it but I think it's important to let is simmer for at least 10 minutes but I usually go about 15 minutes or so.

I usually make enough for several pizza and then freeze it in small portions.  I don't like a ton of sauce on my pizza so I freeze it about 3/4 cup portions but definitely freeze whatever amount you like!

Homemade Pizza Sauce

1 tbsp. extra virgin olive oil
1 tbsp. unsalted butter
2 cloves garlic, minced or pressed
1 (28 oz.) can good quality tomato sauce
1 tsp. granulated sugar (plus more to taste)
1 tbsp. Italian seasoning
Kosher salt and freshly ground black pepper, to taste
Garlic powder, dried basil, dried oregano, Italian seasoning - all to taste

1. Heat olive oil and butter in a medium saucepan over medium heat until butter is melted and foaming has mostly subsided.
2. Add in garlic and cook briefly, about 30 seconds. Add in tomato sauce.
3. Stir in sugar, Italian seasoning, salt, and pepper. Stir to combine and bring to a simmer. Reduce heat and allow to simmer for about 15 minutes. Taste and adjust seasoning. Use immediately or store in the refrigerator for up to a week or portion and freeze.

I haven't checked your blog in a long time, but I'm sure glad I did today!  I was looking for a homemade pizza sauce recipe and couldn't believe it was the first post!  I'll be making the sauce this weekend, but a quick your directions you say to add the garlic and cook briefly "30 minutes."  Do you mean 30 seconds?

Confession: I always just use whatever tomato sauce I have on hand to make my pizza! But I've been looking for a good sauce recipe! I think I know what we are having for dinner tonight!

This is a very good sauce. I will definetly use it for my pizzas. I have some in the freezer i am going to try with mozzarella sticks.
