Key Lime Pie Frozen Yogurt


A long time ago I blogged a "cheaters" Key Lime Pie.  While I do enjoy making things from scratch, there are times when an easy pie is great to throw together and enjoy.  Since then, I've come to love all things lime and this frozen yogurt is no exception!  It's smooth, rich (yet light at the same time), creamy, tart, and just all around delicious.  And with the flecks of bright green from the zest, it's very pretty to look at while you are scarfing it down. :)  This is definitely on the easier side of the frozen treat spectrum because you don't have to heat or strain anything.  Just mix it all together and then freeze it in your ice cream maker.  Jessica thinks that you could probably just mix it together well and freeze it without an ice cream maker and I think that she's probably right!!  It would at least be worth a shot if you don't have one on hand.



Key Lime Pie Frozen Yogurt

Printable Version

32 oz. low fat plain yogurt
1 (14 oz.) can sweetened condensed milk
Pinch salt
3/4 cup lime juice
zest of 1 lime

1. Mix all of the ingredients together well in a large bowl. Freeze in ice cream maker according to manufacturers instructions. Serve as soft serve or store in an airtight container and freeze until solid.

So glad you enjoyed it! I just made a third batch for my freezer. We have so many key limes and I know I will be enjoying this frozen yogurt through the winter months to come! ;-)

I love cheating and this is a great way to cheat!  The ice cream looks yummy and very simple.  I'm assuming that the crackers make is "pie", but them do you really need them? :)  Great recipe!
