{Baby Food} Sweet Potato


The Adventures in Baby Food Making forges on! I had two sweet potatoes in the pantry that I really needed to use and for some reason just never felt like having them with dinner, so I decided to cook them up for Jack.

I baked one whole potato in the oven but you could peel and roast it, or boil them. I just washed it, poked some holes in it, and popped it in for about an hour. Easy peasy.

The one potato made 10 servings for us, but again, he's only eating a little at a time right now. After the first couple of days, he really started to like the sweet potato and would actually open his mouth for it! It's so much more fun to feed him when he wants to eat than when he turns away from food.

Next on the list is green beans...

{Baby Food} Sweet Potato

1 large sweet potato, washed and poked with a fork a few times

1. Preheat oven to 400 degrees.
2. Place sweet potato on a piece of aluminum foil to catch drippings and roast until fork tender 45 minutes - 1 hour.
3. Remove from oven and cool slightly and then cut in half to cool completely.
4. Scoop and out flesh and mash with a fork. Portion out and freeze in ice cube trays or other baby food freezer options.

When ready to eat, add preferred liquid to reach desired consistency. Then enjoy the mess!
