Chicken Burgers with Feta and Spinach

It was a year ago almost exactly when my Aunt Margaret suggested chicken burgers for dinner while we were at the beach. I totally turned my nose up at them...I have no idea why! My Aunt Margaret is a really, really good cook. Everything I have ever had from her has been delicious. But for some reason I was scared of the chicken burger! I think it was the ground chicken.

Well I could kick myself now for that! I love ground chicken. And these chicken burgers are SO GOOD! They are moist and flavorful. You won't even begin to miss the beef! Yum. I cannot WAIT to make these again. And next time Aunt Margaret offers up a chicken burger...I will take up on it!

The original recipe comes from Proceed with Caution. She made them with turkey, I just subbed the turkey for chicken! I also cut the recipe in half. My changes are reflected below.

This recipe also made me realize how much I love Greek flavors!! I even added a little of the leftover Greek seasoning to some extra yogurt and spread that on our toasted buns.

Chicken Burgers with Feta and Spinach
Proceed with Caution

Ingredients
16 oz ground chicken breast
10 oz box frozen, chopped spinach, thawed with liquid squeezed out
1/2 C Feta cheese, crumbled
1/2 C onion, grated
2 cloves garlic, grated
2 Tablespoons Plain Fat Free Yogurt
1/2 C plain bread crumbs
1 egg, lightly beaten
1 heaping Tablespoon Greek Seasoning (see below for homemade recipe)

Directions
1. Combine all ingredients.
2. Form 4 equal sized patties.
3. Cook over medium heat, until no longer pink.

Greek Seasoning

2 teaspoons dried oregano
2 teaspoons salt
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder
1 teaspoon cornstarch
1 teaspoon black pepper

1 teaspoon dried parsley flakes
1 teaspoon paprika
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon thyme
