Chewy Peanut Butter Granola Bars

As I continued on my quest to make more items at home, I came across this recipe and knew instantly that James would like it. The recipe called for peanut butter, that was all I needed to know. He loves peanut butter. And he did, indeed, like these granola bars. He said they were his favorite yet.

I will be making these until I find another recipe that might outdo it. :)


Chewy Peanut Butter Granola Bars

Ingredients
Makes 16 --> If you make tiny, tiny granola bars, you MIGHT get 16. I get 8 every time. 8 "regular" sized granola bars.
1 large egg white (And then I save the egg yolk to make The Chewy!!!)
1/2 cup old-fashioned oats
1/2 cup dried cranberries
1/2 cup sliced almonds
1/4 teaspoon salt
1/2 cup natural peanut butter or almond butter
1/2 cup light brown sugar
3 tablespoons vegetable oil
1/2 teaspoon ground cinnamon

Directions
1. Preheat oven to 300 degrees.
2. Line an 8-inch square baking pan with 2 crisscrossed rectangles of parchment paper, leaving a 2-inch overhang at 2 opposite ends.
3. In a large bowl, combine oats, almonds and cranberries.
4. In a small saucepan, whisk together oil, brown sugar, peanut butter, cinnamon, salt and 1 tablespoon water over low heat until sugar has dissolved, about 5 minutes.
5. Let cool slightly; whisk in egg white.
6. Pour over at mixture; stir until moistened. Spread evenly in bottom of pan; smooth top.
7. Bake until top is firm, about 30 minutes. Let cool 10 minutes.
8. Lift out of pan, using paper as handles.
9. Let cool completely, cut into bars with serrated knife.
