Baked Flautas

When I saw this recipe, from For the Love of Cooking in my Google Reader I knew that I had to try it. I definitely don't crave Mexican food the way that some people do, but this was super appealing to me. And I am so glad that I tried it. It was DELICIOUS!!!! I will definitely be keeping this idea in my arsenal for a quick dinner.

We had it with this guacamole and not to be cheesy, but Holy Guacamole, this was DELISH, too!! What a yummy meal we had!

Baked Flautas
from For the Love of Cooking

1 small can of whole green chiles
1 can of black beans, rinsed and drained
Extra sharp cheddar cheese, shredded
1 large chicken breast, cooked and shredded
1/2 cup sour cream
Small flour tortillas
Fresh cilantro, chopped

1. Preheat the oven to 350 degrees.
2. Coat a baking sheet with cooking spray.
3. Mix shredded chicken with sour cream.
4. Place shredded cheese on the center of tortilla, add some beans, some chicken, a half of a green chile and some chopped cilantro.
5. Roll tightly and set seam side down on the baking sheet.
6. Once they are all rolled, spray the top of each flauta with olive oil cooking spray.
7. Bake for 10 minutes then flip and bake for an additional 10 minutes, or until golden brown and crispy.
