The Pioneer Woman's Go To Chocolate Chip Cookie

And now it is MY go to chocolate chip cookie. (James definitely enjoyed them during the OSU/Wisconsin game.)


James and I were watching football (shocking, I know) and I really wanted something sweet but we didn't really have anything ready to go. So at 9:40 pm, these cookies sprang into my memory and I just couldn't shake the thought of a warm, delicious chocolate chip cookie! It had been awhile since we'd had just regular, good old, chocolate chip cookies. Not chocolate chip with pecans, or chocolate chunk with coconut...or whatever else I come up with. Just perfect, regular, old fashioned chocolate chip cookies. Yum!! By the way, if you have not ventured over to The Pioneer Woman - you must! I love it and so will you. ;)

I did a couple things differently - but nothing major. I cut the recipe in half because I was almost out of flour - crazy! I made Amish Friendship Bread and that takes a TON of ingredients. And because I didn't want to be up all night baking batch after batch. Also, I didn't have margarine or flax seed, so there are your changes!

Pioneer Woman’s Good Ol’ Basic Chocolate Chip Cookies

1/2 cup margarine
1/2 cup butter, softened
1 cup firmly packed brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
2 1/4 PLUS 2 tablespoons all-purpose flour
1 heaping teaspoon instant coffee granules
1 rounded teaspoon baking sod
a1 1/2 teaspoons salt
3/4 cup semi-sweet chocolate chips
1 heaping cup milk chocolate chips
2 tablespoons flax seed, slightly crushed with rolling pin

1. Preheat oven to 375 degrees.
2. In a bowl, stir together butter, margarine, brown sugar, and white sugar until combined. Add eggs and vanilla and stir together.
3. In a separate bowl, stir together flour, instant coffee, baking soda, and salt.
4. Add to wet ingredients in batches, stirring gently after each addition. Stir in flax seed if desired.
5. Stir in chocolate chips.
6. Drop balls of dough on a cookie sheet and bake 11 to 13 minutes. Remove from cookie sheet and eat warm.
