Ooey Gooey Butter Cake

I don't know if this is a Paula Deen original or just a Southern speciality and I honestly don't care!! They are just too good!

I don't know where this craving came from. I don't have much of a sweet tooth and I've only had these one other time, when I was still living in Tampa, during my first year of teaching, so about 5 years ago? Wow. My mind is weird. And random.

Anyway. I wanted them. So I Googled it and found this recipe. I forged ahead. Luckily, I had everything on hand and they are easy.

They turned out well, although a little overcooked, I think. They are rich, but rich and DELICIOUS. They hit the spot, that's for sure. Some of these are going to have to go to school. They can't stay here!!! :)

As we get closer to Halloween and Thanksgiving, I want to try the pumpkin variation. Yum.


Gooey Butter Cake Recipe

Cake
1 (18.25-ounce) box yellow cake mix
1 egg
1/2 cup (1 stick) butter, melted

Filling
1 (8-ounce) package cream cheese, softened
2 eggs
1 teaspoon pure vanilla extract
1 (16-ounce) box confectioners' sugar
1/2 cup (1 stick) butter, melted

Directions.
1. Preheat oven to 350 degrees.
2. Lightly grease a 13x9x2-inch baking pan.
3. In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well.
4. Pat into the bottom of prepared pan and set aside.
5. Still using an electric mixer, beat cream cheese until smooth; add eggs and vanilla.
6. Dump in confectioners' sugar and beat well. Reduce speed of mixer and slowly pour in butter. 7. Mix well.
8. Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. Don't be afraid to make a judgment call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don't bake it past that point!
9. Remove from oven and allow to cool completely.
10. Cut into squares. Just remember that these wonderful little cakes are very, very rich, and a little will go a long way-even for piggies like me!

I love posts like this! I may not be able to eat all the yummy things everyone makes but I can still enjoy them virtually! This cake looks so good... and I love taht it onlyl has 5 ingredients! I just might have to try this for the holidays and indulge a little!

I made the pumpkin one at Thanksgiving last year and it was a hit. I haven't tried your original recipe though...sounds delicious!
