Coconut Chocolate Chip Cookies

James requested Coconut Chocolate Chip cookies. I looked for a recipe and finally settled on this one. As usual, the dough was delicious. I don't know why I even bother baking the dough, we should just eat that!! :)

The cookies turned out soft and delicious. A nice treat!

Coconut Chocolate Chip Cookies

1 c. butter, softened
3/4 c. sugar
3/4 c. lightly packed brown sugar
1 tsp. vanilla (I used 1 1/2 tsp. I always add more vanilla than called for. I don't know why I started that, I'm sure I read it somewhere!)
2 eggs
2 1/4 c. unsifted all purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 c. chocolate chips (12 oz.)
1 c. sweetened coconut

1. Cream butter, sugar, brown sugar, and vanilla until light and fluffy.
2. Add eggs; beat well.
3. Combine flour, baking soda, and salt; gradually into creamed mixture.
4. Stir in chips and coconut.
5. Drop by teaspoonfuls onto cookie sheet.
6. Bake at 375 degrees for 8-10 minutes or until lightly brown.
7. Cool slightly; remove from cookie sheet.

6 dozen cookies.
