Yummy sandwich!

For lunch today (Yay for being at home!), I knew I wanted a sandwich, but I didn't want the turkey that is in the fridge. I bought delicious rolls at Publix (the same ones they use for their subs) and wanted to use those up.
I also knew that I had basil that needed to go and some mozzarella. If only I had tomato! But no. So I settled for roasted red peppers and that was a GREAT choice.

I didn't want to get out my grill pan (I hate cleaning that thing.) but I wanted a warm sandwich. Since we don't have a sandwich press, I just used a regular skillet, a pot and a can of tomatoes to make a pressed sandwich. Delish!

Pressed Sandwich with basil, mozzarella and roasted red peppers

1 roll, split lengthwise
basil to your hearts desire
mozzarella 2-3 thin slices
2 pieces roasted red peppers
1 tsp. butter
1 tsp. olive oil

1. Heat a medium skillet over medium high heat.
2. Melt butter and add olive oil.
3. Assemble sandwich and add to skillet.
4. Put pot onto of sandwich and press down. Put large can inside of pot to weight it down.
5. Cook until bread is toasty and cheese has melted.
6. Flip and repeat.
7. Slice and enjoy!
