Comforting.

James decided that he would eat the leftover Chicken Tortilla Soup for the 4th meal in a row for dinner. I was not partaking in this event. Enough was enough. Lunch, dinner, lunch - all the same - was good for me. So I made my go to meal when I'm on my own. Pasta. Yum!!
I made a quick cheese sauce with extra sharp cheddar, mozzarella and parmesan. It was delish. I even added some peas and that was the perfect accompaniment to the "mac and cheese".

Sort of Mac & Cheese All of these measurements are VERY approximate.
Serves 2

Pasta (about 1/3 box)
2 tbsp. butter
1 1/2 tbsp. flour
1/2 - 3/4 cup milk (I use skim.)
I really have no idea how much cheese I was adding, I just grated until it looked good!
1/2 c extra sharp cheddar cheese
a little less than 1/4 c mozzarella
2 tbsp. parmesan
1 tsp. spicy mustard

Prepare desired pasta. (I used rotini because I had about 1/3 of a box.)

1. In a medium sauce pan heat butter over medium to medium low heat.
2. When butter is melted, add flour.
3. Let flour cook for about a minute and whisk together.
4. Season with salt and pepper.
5. Add milk and whisk until combined.
6. Bring to a slow boil.
7. Mix in grated cheeses and whisk until smooth.
8. Add mustard and continue to whisk.
9. Remove from heat, add peas and pas ta.
10. Stir and serve! Enjoy.
