Easy Chicken Sandwich
1 tbsp. olive oil
1 garlic clove, minced
1 tsp. oregano
2. Let marinade 30 minutes - 1 hour.
2 buns of choice, toasted
or any other toppings of choice
1. Preheat oven to 350.
2. Heat skillet or grill pan over medium heat.
3. Remove chicken from marinade and wipe excess marinade.
4. Put 1 tsp. olive oil in pan.
5. Place chicken in pan.
6. Brown on each side for about 5 minutes.
7. Remove chicken from pan and place in pre-heated oven.
8. Continue cooking in oven for 15 minutes or until chicken is cooked through.
9. Assemble a delicious sandwich and enjoy!

4 large potatoes, peeled (I did not peel, and I used 3 medium potatoes.)
2 tablespoons of olive oil
1 tablespoon of salt (Omitted because I forgot!)
1 tablespoon of seasoning salt (optional, recommended)
1 tablespoon of garlic powder (optional) (Omitted)
Preheat the oven to 350.
1. Cut the potatoes into your favorite fry shape. (We tend to use 1/2 inch by 1/4 inch by 2 inch pieces. There is no rhyme or reason to the size, it is just what our family prefers. Cut the potatoes into whatever size you would like, but remember the deeper the potato, the longer the cooking time and adjust accordingly.)
2. Wash the potatoes to remove excess starch and pat dry.
3. In a large bowl, mix the olive oil and cut potatoes until the potatoes are covered in a thin coating of oil. This will let them brown. (To really minimize oil usage, buy an olive oil spritzer and spritz the potatoes.)
4. Bake the potatoes for 15 minutes or until the are start to dry. (I let them cook for about 20 minutes.)
5. Set the oven to broil and continue cooking until crispy. (In my oven this is 3-5 minutes, but depending on the strength of the broiler and the positioning of the rack, it could be less time.) (This took me about 10 minutes and they still weren't as crisp as I like them.)
6. Immediately after removing the fries, sprinkle the salt and any desired spices on top of the potatoes.
